[Begin recording.] Uh, hi. It’s Chef Aurum Leuci again, late… still. Are you sure you fixed the portal coordinates? Because this is NOT the culinary facility. Everything is cubes. I think I might actually be in a computer, because, uh.. when I say everything is cubes, I mean everything is cubes. I’m fine, and my gear is fine, and everything I make is fine, but I’m on an island full of giant pixelated-looking mushrooms, and pixelated… cow… things? With mushrooms growing on them.
…those could probably make a delicious meal, actually. Don’t worry about me, I’m going to see what I can cook up for some quick dinner. This weird new dimension might be a place worth exploring. As always, no need to worry. If I get into a sticky situation, I’ll jump dimensions again— but hopefully I’ll at least have time to eat.

I love this recipe, and so does my entire family. It’s a delicious swiss-and-mushroom burger that’s easily made completely plant-based using Impossible Beef and Daiya cheese- and it always turns out SO good! The reason this recipe isn’t quite perfect is twofold, so let me start with the somewhat sillier reason first: I WANT THIS BURGER IN MY GAME!!! Please!! We have the technology (bread, mushrooms, cooked beef). Give me the mooshroom burger, Mojang. Or at least a sandwich of some kind. The second point off is a matter of personal preference; the original recipe makes four absolutely MASSIVE burgers. Like, big enough that my family (all four of us) could barely finish them the first time I made this. I highly recommend cutting the recipe (and the resulting two, still massive, burgers) in half. Aside from that, this recipe was perfect (and delicious!) and very satisfying.

This recipe is another one I wish I could rate absolutely perfect. It’s easy, the ingredients are easy to get but relatively uncommon in most dishes, and the end result tastes incredible! This recipe made me love carrots, and it resulted in me even agreeing to TRY beets, which is a huge feat. The only point it loses is that the cookbook drastically underestimates prep time for cutting and peeling the vegetables. Especially if you’re not used to handling beets, they’re messy and will definitely freak you out at least once when the juice gets on your hands. Honestly, though, this cookbook was worth buying JUST for this recipe. It’s a consistent hit with my family.

"Passenger princess isn't a role without a very specific and important task - you officially have playlist duties." Maverick follows after her, keys jingling in his hand. "No, nix the notebook, we can use our notes app. That'll do. Pizza can't wait the ten minutes it'll take for me to find it." He ushers her out the door and to the Ocean Crest Elevator.
Aside from the task of DJ, Maverick also left it up to Christina to begin a list of other pizza places to bounce around. All with decent enough reviews (for them to judge to validity of) and close enough to their first stop where Maverick is halfway through his first slice.
"You have to understand," he begins in between another bite. "I can't rate the cheese all too much, other than I think they use Daiya for mine, which loses a point. Honestly, Miyoko is the best for pizza, what are they thinking?" It's his biggest critique. "Write that down. Also, the gluten free crust does not taste like cardboard, so that's plus a point. What about your slice?"

Christina heads for the door, reaching out to grab the door handle. She honestly can't remember the last time she went on a spontaneous trip; one that made this exciting. She turns to look over her shoulder at him as she turns the knob, pulling the front door open.
"Can't say I don't love being a passenger princess." She smirks. She holds onto the door knob, pressing her lips together. "We absolutely have to get a slice. Do a little crawl with pizza." She chuckles. "Unless you want to go all the way back to my place, grabbing your notebook will be a good idea."

Daiya Deliciously Dairy Free Roasted Vegetable Pizza

I didn’t hate this as much as I thought I would.  That said, I did not love this product, either, so do with that what you will.
The base was meh, the vegetables were meh, and the cheese was pretty bad when compared to a more traditional frozen pizza but overall meh when you assess it as a vegan frozen pizza.  I do recommend this over their plain cheese frozen pizza.  This at least has vegetables for a different flavor.  I wish it had more seasoning.  All in all I would give this product a 4/10.  But let’s be real, here.  When has anyone ever had a frozen pizza and thought, “That’s it!  That’s what I’ve always wanted!  10/10!”?  Because I seriously doubt that has ever happened.
I’d say it’s is great for a movie night with vegan friends.  I would not feed this to my non-vegan friends though because they would not like this.

Date Night at Pielogy

The bf suggested Pielogy for takeout pizza. It was storming, we were really on a lazy mode and did not want to leave the house. Saturday is for date night, though. Date night rules must not be broken. So I got dressed in sweats, yoga pants and Uggs, and we drove to Pielogy which just moved into the hood.  I am trying it for the first time while the bf is a Pielogy veteran as he has one that is close to his office.

You can custom-make your own pizza. You choose the sauce (pesto, white, tomato, etc). Add your cheeses, meats and veggies. Then they bake it for you in the oven.
They have Daiya Vegan Cheese for lactos like me.
The pizzas are personal size but they are big and (more than) adequate for a meal.
The pizzas are made with thin crust which is how I like mine.
I “made” a vegan pizza with Daiya cheese, artichokes and sundried tomatoes. The carnivore bf threw all kinds of meats on his pizza.
We took the pizzas home with us, lit the fireplace and continued watching Martin Scorcese’s “Gangs of New York” on Starz while enjoying our Pielogy.
A beautiful, stormy evening.
Cheap and delicious date night for just a little over $20 (And who says date nights need to be elaborate and expensive?!)

Vegan Grocery Haul and Review

Follow Your Heart Parmesan: 8/10 Finding a vegan cheese that I really enjoy has been a bit of a struggle for me but this has definitely given me hope. I usually try to steer clear of mock cheese since trying Daiya years ago but this is one of my new go-to’s. It melts surprisingly nicely and is good in both recipes and by itself. I went through a whole container in less than a week and I’ve already bought more.

Victoria Vegan Alfredo Sauce: 7/10 This was the first store-bought vegan Alfredo sauce I’ve ever tried so I don’t have much to compare it to (other than my own homemade one) but it was quite flavorful. It was very acidic when I tried it by itself but when I added it with veggies and ravioli it was a lot better. It had a nice texture which is sometimes hard to execute when using cashews. I will most likely buy this again.

Field Roast Chili Mac ’n Chao: 6.5/10 As a whole, this was passable for what it is. The “meat” was really flavorful but the cheese sauce was a bit underwhelming. I was a little disappointed in the cheese considering Chao is my favorite vegan cheese brand at the moment but overall it was enjoyable. I would probably buy it again if I was really hungry but I don’t think I would go out of my way to get it again.

Rising Moon Garlic & Roasted Veggie Ravioli: 6/10 Having not had ravioli in years, especially since being vegan, I had my hopes up about these. It felt like something was missing flavor-wise in the filling but as a whole dish it was fairly good. When paired with a flavorful sauce, it made it ten times better. I will probably buy these again and just add a very robust marinara or Alfredo to make it more tasty every time.

Amy’s Vegetable Pot Pie: 4/10 As an avid buyer of Amy’s frozen meals, I was quite disappointed in this. I’ve been a fan of this brand for years now and always found the products really tasty but this one was very bland and lacking in flavor. The filling was a bit better after I added salt, pepper, and a few spices. The crust, however, was just very lifeless and tasted of precisely nothing. I probably won’t be purchasing this again.

Hilary’s Apple Maple Breakfast Sausage: 5/10 I had never tried this brand before having these so I wasn’t sure what to expect but I wasn’t a fan of these. Both the texture and flavor were off in my opinion. I was a huge fan of the MorningStar Maple Sausage Patties before going vegan so I had high expectations for these but they unfortunately didn’t deliver. I probably won’t be purchasing these again.

Coconut Bliss Vanilla Sandwich: 8/10 Overall, this was my favorite item that I bought. I would definitely buy one of these again. The cookies were a bit grainy which is to be expected from a gluten free cookie recipe but the coconut ice cream made it worthwhile. It was really nostalgic to eat and just reminded me of having a Good Humor chocolate chip ice cream sandwiches growing up. You can’t really go wrong with an ice cream sandwich so this will immediately be making it back into my shopping cart.

The Friendly Toast

Has anyone really ever had the desire to be surrounded by neon signage, a myriad of Chinese checkerboards, basketball hoops and doll heads as the smell of breakfast wafts through the air? Probably not, but if that’s what gets you going, then the Friendly Toast is right up your alley.
The self-proclaimed ‘eclectic diner’ (eclectic, indeed—the walls are Shrek green) has five locations in New England serving breakfast, lunch, and dinner all day. Their website boasts a creative dining experience, and while the eatery’s choice of decor is unique, the experience as a whole is pretty standard.
I like the Toast (I’ve never heard anyone ever call it “the Toast” but if we are being all creative and different then I’m gonna run with it), point blank because they have vegan options. That’s right, options, plural. Not just one, but several vegan meals, or meals that can be easily modified to become vegan. And every one that I’ve tried (see below) has been decent. They also have mimosa flights which, while unrelated to veganism, are delightful all the same.

I have had a few different meals at three different Toast locations (they have locations in Boston, MA; Cambridge, MA; Burlington, MA; Portsmouth, NH; and Burlington, VT) and I’ll rate them on a scale of 1-5 stars.

1. Vegan Breakfast Burrito - ★☆☆☆☆ - A flour tortilla filled with tofu, black beans, salsa, our avocado lime sauce, corn salsa & vegan cheese.
Full disclosure, this was the first thing I ever had at the Friendly Toast and I will never get it again. I don’t think that they actually know how to season tofu, because every tofu dish I’ve tried of theirs tastes like chili powder and nothing else.
2. So It Ve-Gan - ★★☆☆☆ - Tofu scramble with black beans, salsa verde, spinach, roasted red peppers, corn salsa & tortilla strips.
Retweet the above review, with some modification: The tofu is bland aside from the overdose of (what I assume is) chili or cayenne powder. And they could at least throw down some tumeric to make the tofu a scrambled egg-like yellow. I did like this dish more than the burrito, because I could mix everything around with the potatoes (which are also spicy) and drown it in ketchup. 
At some locations the chef will leave the spice off of the home fries, which I appreciated. TBH if they let you modify the dish by adding some avocado and a few more veggies without charging for each add-on, I’d consider getting this again. 
3. Return of the Mac Burger - ★★★☆☆ - Impossible burger, Mac-&-Cheese, lettuce, tomato. 
This is the best meal that I have had at the Toast. The original is not vegan, but if you order it veganized, they’ll make some swaps so that you get the Impossible burger, vegan mac-&-cheese, and a vegan bun! So hearty, I couldn’t finish it in one sitting. Comes with fries and pickles. They use daiya cheese for the mac-&-cheese, but I was told that they used to make their own vegan cheese. C’mon, Toast! Get back on that homemade cheese train, please!
4. Impossibly Bomb Wrap - ★★★☆☆ - A wrap filled with Impossible burger, vegan cheese, onions, roasted red peppers, mushrooms & avocado lime sauce.
This was good! My only complaint was that I ordered this as take-out and didn’t have any ketchup for the fries that came on the side. But this wrap is tasty and I appreciate that they didn’t just take everything from their Impossible Burger menu item and throw it in a wrap form.
5. Chocolate Chip Pancakes (vegan) - ★★★☆☆ - A vegan chocolate chip pancake.
Pretty standard, good old-fashioned, American pancakes. If you received a vegan one over one with milk and eggs, you wouldn’t know. The cakes are the size of your face and filling af.

I’m not sure if this is universal to all Friendly Toasts’ but every time I have attended one, the waiter has sat down at an adjacent table to take my party’s order at eye-level and every single time I am taken aback. Not that it really matters, but I feel like I go through this weird mini culture shock and I have to remind myself that it’s all just part of the groovy experience, man.
You will also leave every Toast visit with a postcard in hand. Full disclosure: it’s endearing the first time you get one with the check, but after your third, fourth, fifth visit nobody wants to take it, but you feel weird leaving it on the table because you’re not sure if there’s some rule prohibiting the waiter to take it back, and then you either bring it home to add to your personal collection or to toss it. It’s wasteful, and I’m curious if anyone has ever actually sent one.
Regardless, the next time that you want to grab some brunch, the Friendly Toast has plenty of viable options for vegans and non-vegans alike. The staff are knowledgeable and friendly, the atmosphere is fun and full of conversation pieces, the portions are great, and the food is satisfying.

First time trying @daiyafoods new Cutting Board Shreds. First impression, they're an odd, hard plastic feel when cold. I put them in a few tacos and when they got melty (not totally) they tasted better. Excited to try them in a grilled cheese and quisadilla. I think these ones will work best if fully melted. Off topic to the rest of my blog(both of them) but honestly in charcater for me so:
Dairy free mozzarella review- brought to you by fable
Daiya - sucks ass. Does not taste cheesy in any way. When melted sticks to your teeth in a gooey gross way. Do not buy ever. Visually? When unmelted its a crumbly tan grey blob. When melted it imitates melted mozzarella well,,,, just in an off way. Offical rating? 0/10 get off my fucking lawn.
Violife - pretty ok unmelted. Average mozzarella taste. Smells like mozzarella! Feels like cheese too. Melts oddly. Has weird edges that dont always fully melt and sticks to you teeth in a similar to daiya way but less gross. Tastes like cheese all around. About half the time feels like cheese. 6.5/10 its can go on a pizza just dont have high hopes.
That's all the ones ive tried. I just felt like hating on daiya.
